    Organic, Fair Trade Certified™ Ancient Tree Moonlight White is a tea made with minimal processing, relying mainly on ambient withering. This year, due to drought conditions, the fresh tealeaves
    had less moisture and during processing, the tea dried at a faster rate, so this lot seems a bit less oxidized and has a noticeably fresher edge to it. Still, this tea has its distinctive fruity,
    melon, honey and a bit flowery character. It has a truly unique character of ancient cultivated assamica with specific fruity, honey and brisk character that differs from the more savory Fuding
    white teas. Prepare like white tea or try using more leaf, a guywan and prepare using gong fu cha method, similar to making pu-erh. ORGANIC
    
 Use a porcelain Guywan (See
    Below) , glass teapot or a Ho-Hin (See Below) . Infuse 4 tablespoons (6-7 grams) in 5-6 ounces of water. Use 185˚F water. Infuse the first infusion for 3 minutes, 2nd infusion for 3 minutes, 4th,5th and subsequent infusions for a longer
    time based on the desired strength. / Ingredients: Organic Fair Trade Certified™ white

Guywan (lidded bowl) is a traditional Chinese style of teaware. Typically, the guywan consists of a bowl, lid and saucer. The tealeaves are put in the bowl, water is poured over the tea, and the lid covers the bowl so the tea can infuse while maintaining its aroma. Traditionally, the lid keeps the leaves at bay while you sip directly from the bowl.
